pumpkin dip

As everyone prepares for the festivities this coming Thursday, I thought I would share a new recipe I got off of Pinterest.  I have been experimenting with different recipes to find a light but flavorful combination for cookies or fruit.  This one is perfect…light, sweet and a great pumpkin flavor.  Christina from Carolina Charm hit it out of the park.  The recipe is below, but you should check out her blog… http://www.northcarolinacharm.com/

Pumpkin Fall Dip

 15 oz can of pumpkin purée

5 oz box of instant vanilla pudding (do not prepare)

16 oz container of cool whip

1/2 tbsp of Pumpkin Pie Spice


Mix pumpkin purée, dry pudding, cool whip and pumpkin spice together until combined.  Chill for several house before serving.  Sprinkle surface of dip with cinnamon.  Serve with apples, vanilla wafers and/or ginger snaps.

This past weekend was so beautiful.

There was a chill in the air and pumpkin picking on our minds.

One of MY favorite parts of our fall day trips is the scenery to and from.

But if you ask my girls, theirs would be the PUMPKINS!

So many different varieties…..

These wheelbarrows are just too small.

A hay ride and a picnic lunch took us into the afternoon.

A perfect ending.

Now on to the apple orchards for some apple fritters…..

Fall is here.

Emma couldn’t wait to carve the pumpkins this year.  Last year she stuck her hand in once, and that was the end of that.

Yes, that is a power tool.  Two  years ago my hubby went out to the garage for something else besides kitchen cutlery to get past the tough surface.   Was this out of frustration or pure genius?  I’ll let you be the judge.

Cheaters!!  What’s with the gloves??
